Greek Summer Salad
What you’ll need:
pasta (I like rotini or something similar for this, also can use a lentil pasta or a brand like Banza for added protein)
cucumber
green pepper
red onion
fresh dill (a few tbsp)
1 whole lemon
tomatoes (I prefer cherry or grape)
Greek olives (handful ~.5 cup)
extra virgin olive oil
salt and pepper
What to do:
boil the water and cook the pasta, drain and rinse with cold water once done
while pasta is cooking, chop up cucumber, pepper, onion all into about 1-2 inch pieces and toss together in a bowl
chop dill, toss into bowl
cut tomatoes into halves, toss into bowl
add olives into bowl
once the pasta is cold add it to the bowl
add in a few tbsp of olive oil, juice of whole lemon, pinch of salt and pepper and mix it all up
