Greek Summer Salad

What you’ll need:

  • pasta (I like rotini or something similar for this, also can use a lentil pasta or a brand like Banza for added protein)

  • cucumber

  • green pepper

  • red onion

  • fresh dill (a few tbsp)

  • 1 whole lemon

  • tomatoes (I prefer cherry or grape)

  • Greek olives (handful ~.5 cup)

  • extra virgin olive oil

  • salt and pepper

What to do:

  • boil the water and cook the pasta, drain and rinse with cold water once done

  • while pasta is cooking, chop up cucumber, pepper, onion all into about 1-2 inch pieces and toss together in a bowl

  • chop dill, toss into bowl

  • cut tomatoes into halves, toss into bowl

  • add olives into bowl

  • once the pasta is cold add it to the bowl

  • add in a few tbsp of olive oil, juice of whole lemon, pinch of salt and pepper and mix it all up
