DIY Burrito Bowl

The easiest meal ever. You can add some grilled shrimp or whatever meat if you prefer to add it. Play around with the toppings- this is a great base to start. What you’ll need:*This is completely up to you! The list below is just for inspo black or pinto beans1/2 red onion about 8 cherry/grape tomatoessalsa cabbage mix (cut up some cabbage or make your life easier by using a store bought version…mine is from TJ’s!)sprouted brown rice (love Thrive Market’s version!)avocadosgarlic powder or minced garlicjalapeños2 limesa bunch of cilantrochips for topping What to do:first cook your beans if they’re not canned and cook the sprouted brown rice at the same timechop up your onion, tomatoes, cilantro and jalapeñossmash avocado in a bowl and add about a tablespoon of onion to it, a few of the tomatoes, a tablespoon of cilantro and some jalapeño (your call on how spicy)juice one lime and add to the avocado mixtureadd garlic powder or minced garlic to the avocadoadd some salt and pepper to taste (this is your guac if you can’t tell by now)once the rice and beans are done cooking, plate them in a bowladd in the salsa, guacamole, cabbage, and rest of the onion, tomatoes, cilantro, jalapeños and the second lime (juice it) optional to crush chips on top for a little crunch

  • salsa

  • avocados

  • garlic powder or minced garlic

  • jalapeños

  • 2 limes

  • a bunch of cilantro

  • chips for topping

  • smash avocado in a bowl and add about a tablespoon of onion to it, a few of the tomatoes, a tablespoon of cilantro and some jalapeño (your call on how spicy)

  • juice one lime and add to the avocado mixture

  • add garlic powder or minced garlic to the avocado

  • add some salt and pepper to taste (this is your guac if you can’t tell by now)
