Honey, Shroomy Toast
This makes for a super easy and delicious lunch. Every time I make this I impress myself with how little effort it takes and how fancy it tastes.
What you’ll need:
a very delicious slice of bread (I suggest sourdough but focaccia or a crusty french bread would work great too)
handful of mushrooms of your choice (love using shiitake for this but in this photo I have button)
extra virgin olive oil
pine nuts (1/3 cup or so)
honey (1 tbsp)
rosemary (could use other herbs or even spices instead but this works great)
something to cut the sweetness! I like a tbsp of balsamic or dijon mustard but even a lemon squeeze would work
sea salt flakes
What to do:
sauté the mushrooms in a little olive oil with a pinch of salt and rosemary over medium heat until cooked through
combine pine nuts, 3 tablespoons (I just eyeball it, no need to be exact) of olive oil, a pinch of rosemary, honey, balsamic and a pinch of salt all in a small bowl
using a mortar, grind up the pine nuts and mix all the ingredients together
broil the bread in the oven for a few minutes to get it nice and crispy
take bread out of the oven, top with the pine nut/honey mixture and finish it off with the mushrooms and voila!
