Deliciously Ella’s Butternut Squash, Kale and Pomegranate Salad
Easy, takes some time to bake but really minimal effort and really tasty!!
What You’ll Need:
Butternut squash
Kale
Pomegranate seeds
Pumpkin seeds
Balsamic vinegar
Extra virgin olive oil
Sea salt
What To Do:
Preheat oven to 400 degrees
Peel and cut the squash into cubes
Place the squash onto a baking sheet and toss with olive oil and sea salt
Once the oven is preheated, place the squash in the oven and bake for 35-45 minutes
Tear apart the kale and add it to another baking sheet with a little olive oil and sea salt
For the last 5 minutes that the squash is baking, put the kale in the oven too
Place the kale and squash into a bowl and add pomegranate seeds, pumpkin seeds and balsamic vinegar
