Deliciously Ella’s Butternut Squash, Kale and Pomegranate Salad

Easy, takes some time to bake but really minimal effort and really tasty!!

What You’ll Need:

  • Butternut squash

  • Kale

  • Pomegranate seeds

  • Pumpkin seeds

  • Balsamic vinegar

  • Extra virgin olive oil

  • Sea salt

What To Do:

  1. Preheat oven to 400 degrees

  2. Peel and cut the squash into cubes

  3. Place the squash onto a baking sheet and toss with olive oil and sea salt

  4. Once the oven is preheated, place the squash in the oven and bake for 35-45 minutes

  5. Tear apart the kale and add it to another baking sheet with a little olive oil and sea salt

  6. For the last 5 minutes that the squash is baking, put the kale in the oven too

  7. Place the kale and squash into a bowl and add pomegranate seeds, pumpkin seeds and balsamic vinegar
